Description

Hand harvested on 8th of  March 2022. Destemmed to stainless steel tank. Natural fermentation, with pressing at 5° balling (total time on skins 3 days). Uninoculated malolactic fermentation. No additions of acidity. Unoaked. The intention was seeking the fine tension and clarity of young vine-fruit, whilst exploring the specific imprint organic viticulture would have on expression.

Notes:

Ruby medium, to light colour with garnet rim. Delicate violet, raspberry and red plum. Some notes of scrub, almost hoppy. Light to medium style with a lively finish.
